Panforte

This quick and easy sweet treat is perfect for keeping in a sealed container or jar for up to two weeks. The ‘Christmassy’ flavours of the spices and nuts couple well with afternoon tea on a cold day, or when a spontaneous visit from a friend requires a snappy snack to impress. This Panforte recipe can be added to with dried fruit, cranberries, crystallized ginger or your favourite nut to further improve the appearance and flavours.

Ingredients

350g Honey
300g Dark Choc
125g Flaked Almonds
125g Chopped brazil nuts
187.5g Cake flour
50g Cocoa Powder
1 tsp Ginger Powder
2 tsp Cinnamon

Method

Bring the honey to a boil
Melt the chocolate then remove the honey from the heat and add chocolate to it
Stir in the nuts
Add the cocoa powder then the flour, cinnamon and ginger
Pour into a mould lined with rice paper and place in the fridge to set
