Hot Milk Sponge Cake

This easy hot milk sponge cake recipe delivers the flavour of a good old fashioned ‘grandmother’s’ cake. It is moist, has a nice fine crumb and a delicious flavour. It is also incredibly versatile, it can be flavoured with various things and also makes a great base cake to something more elaborate like this lemon meringue cake_DSC0720Ingredients

4 large eggs
330g castor sugar
292g cake flour
15g baking powder
120g butter
190g milk

Method

In a stand mixer, whisk the eggs and sugar until ribbon stage. Then in the meantime, heat the butter and the milk in a saucepan until the butter has melted. Add the milk and butter to the egg mixture and fold it in carefully. Sieve the flour and the baking powder into the mixture.Fold in carefully. Pour mixture into the lined tin and bake for 45 minutes at 180°C.Hot Milk Sponge CakeHot Milk Sponge Cake
