Did you know that The Snooty Fox at Fern Hill Hotel was the first place in the Midlands to serve and display vegan options on our menu? I’d like to say that we spotted the vegan movement and the necessity for plant-based options way before it became the standard it is today. Since we first began serving vegan meals in 2015, the demand and support for our plant-based options has grown from strength to strength, and today I’m proud to show you the latest vegan additions to our new winter menu. From superfood salads for the health conscious to beer bread sandwich and chocolate brownies for the decadent-lovers, we’ve got our plant-based patrons covered! And dare I say, they’re so delicious that I hope to see more of our omnivorous clientele dipping their toes into our more environmentally-friendly choices.
New on the mains menu is our superfood salad made up of raw broccoli, goji berries, chia and linseed, cranberries, baby tomato, apple, chickpeas and kale crisps and topped with vegan mayonnaise dressing. We also have a comforting sweet potato toast topped with chickpea tofu, peppadew pesto, tahini, bulghar wheat, tomato jam, coriander and kale crisp. A firm favourite already is our grilled spiced cauliflower steak on butter bean and garlic puree topped with avocado, tahini, sundried tomato and curry oil. Another healthy and filling salad is our bulghar wheat, pea and crispy nugget salad with beetroot relish, mint, coriander and olives, dressed with dill vinaigrette. The beer bread sandwich filled with BBQ soya burger patties, peppadew and caramelised onion mayo, cucumber ribbons and crispy onion rings and served with crispy kale and fries will fill the hungriest of tummies! And lastly, out Brinjal Gyro, which is a pita filled with marinated grilled brinjal, carrot, tzatziki, pickled red cabbage, tomato jam, chickpea tofu and beetroot relish is packed with flavour!
On the sweet side we now have an Eton mess – vegan meringue shards, coconut cream, seasonal fruit and seasonal sorbet; a delicious Vegan brownie served with chocolate ganache and coconut cream; and a moist vanilla sponge served with spiced apple, caramel and ginger ice cream. I am so proud of our vegan menu and hope that you will enjoy!
