Spring Dinner at Hartford House

Myself and Pastry Chef, Cayley, recently collaborated with the talented Chef Constantijn for a Spring Dinner at Hartford House, the beautiful and award-winning historic hotel situated on the Hlatikulu Road in Mooi River. Photographer Michael Stewart took some amazing photographs of the night and of the plates before they went out, which I just had to share. My own contribution to the dinner was a Feta Panacotta, Kohlrabi, Watercress Emulsion, Olive Caviar, Serrano and Fennel starter and a 36 hour Aromatic Pork with carrot and ginger puree, broad beans, purple cauliflower, beets and potato pave. Cayley was responsible for the sweetest part of the evening and her dishes were both the Afrikoa Chocolate ganache with hazelnuts and salted caramel ice cream and the Lemon Cheesecake with strawberry and matcha meringues.

Chef Constantijn and his team were responsible for the rest of the menu which included a Lamb, Pine and Lamb hollandaise, crispy parsnips, spaghetti and lamb meat ball and a Mackerel, quince, pickled cucumber, nori sea sand, prawn cracker and jasmine dashi sauce dish. We had such a great time preparing this menu for our guests and by the looks on everyone’s faces it was a successful dinner indeed.
